A Must Make Summer Dessert
[bl]W[/bl]hen we bear fruit, the ways we can bless, the things we can make from it are countless. When God’s Spirit roots in us, dwells in us, and bears life in our heart and home, it carves out environments that are pleasing to others. Delightful to enter. Delicious to take part of. Be creative with the fruit you bear. Make good things of it.
Strawberry Shortcake
1 qt. strawberries, chopped small
¼ c sugar
In a bowl stir together chopped strawberries and sugar. It will make it’s own sauce within an hour of sitting at room temperature.
Biscuits
2 c all-purpose flour
1 T. baking powder
4 T. sugar
½ tsp. salt
1 ¼ c heavy cream
Combine flour, baking powder, sugar, and salt . Add the cream, and stir the mixture until it just forms a dough. Gather the dough into a ball and knead it a bit. Spoon out dough onto a cookie sheet. Approximately 8-10 biscuits. Brush the tops with the heavy cream and bake in a preheated 425 degree oven for 15 minutes, or until they are pale golden.
Whipping Cream
1 ½ c heavy whipping cream
¼ c sugar
Pour heavy cream into SMALL mixing bowl (a small bowl helps prevent spattering). Beat on high for 1 minute. Add sugar and continue to beat until it’s thick and fluffy and holds its shape – it will be spoonable (2-3 minutes).
Split the biscuits horizontally with knife, arrange the bottom halves on plates and spoon the strawberry mixture over them. Place the top half of biscuit on top of strawberries and spoon the whipped cream on top.
When I make this for company I prepare the sweetened strawberries in advance and combine all the dry ingredients for the biscuits. After dinner, I will then complete the biscuits, and while they are baking, I whip the cream.
